Packed with protein and lots of veggies, these “Vegetarian Breakfast Burritos” are a great way to start your day. But don’t limit yourself to having them only for breakfast. They are equally as tasty for lunch or dinner!
Recipe
Prep time: Approximately 5 minutes
Cook time: Approximately 15 minutes
Total time: Approximately 20 minutes
Ingredients
2 tablespoons – Olive oil
1 – Small yellow onion
½ – Yellow pepper
½ – Red pepper
12 – Large eggs
1 tablespoon – Minced garlic
½ tablespoon – Parsley flakes
½ teaspoon – Himalayan salt
¼ teaspoon – Black pepper
½ cup – Mozzarella cheese
6 – Medium tortillas
Instructions
- Chop the onions and peppers.
- Add olive oil to a large pan, set stovetop to medium-high heat, and wait for one minute.
- Add the onions and peppers to the pan. Cover and let cook for seven minutes, stirring occasionally. (If heating the tortillas, set the oven to 350 degrees at this time).
- While waiting for the onions and peppers to cook, whisk together eggs, garlic and other spices.
- Add the eggs to the onions and peppers in the pan. Turn the stove to medium heat and cook for about three minutes, scraping the bottom of the pan continuously so as not to burn the eggs.
- Remove from heat. Top the eggs with cheese and put the cover on the pan so the cheese can melt.
- To warm the tortillas, put in preheated oven for 3 minutes.
- Serve with your favorite toppings, such as salsa and guacamole.

Notes
To conserve energy (especially in the summer) I love to use my Toast-R-Oven to warm the tortillas, setting it to the grill setting for 2 minutes for each tortilla.
For less of a mess I put the toppings in a bowl for my kiddos so they can dip their burritos – they LOVE it!!
Though it does say “Vegetarian Breakfast Burritos” we like to eat these any time of the day. Who says you can’t have breakfast for dinner, right?!
